Meal Plan Monday
Sunday - leftovers
Monday - hot dogs and french fries
Tuesday - tuna melts
Wednesday - spaghetti
Thursday - tuna melts
Friday - pancakes
Saturday - leftovers
We are having tuna melts twice because we like them and because we were just given 6 cans of tuna and 4 dozen buns. We don't want to waste them so we will use them up.

Meal Plan Monday on a Tuesday.
Yesterday was a holiday here in Alberta so the kids were home from school and with being sick we just kind of laid around all day. Then last night I had to go and help count at the casino from 10:30 to 1:30. The air cadets were doing it as a fundraiser. Tonight I will be helping again. Hopefully I will be able to get better instead of worse considering the lost hours of sleep(I'm usually in bed by 11). Oh well it only happens once a year and the cadets need the extra funding right now.
Anyways here is the menu...
Sunday - leftovers(very happy we had some since I didn't feel like cooking)
Monday - pizza(almost became fend for yourself because I was still sick but the boys went for a walk and came back with Little Ceasars pizza for everyone, they are such thoughtful kids)
Tuesday - goulash
Wednesday - beef stew
Thursday - fish
Friday - chili

Meal Plan Monday
The kids and I did up the menu on Saturday afternoon, then we helped out at the Valentines dinner at our church in the evening. After dinner some college students did a performance for the guests, but my little ones were getting antsy. So we stayed in the gym and cleaned up the girls took down all the decorations that were on the walls, I cleared and washed tables and put all the tableware away, while the boys took down tables and chairs. The 5 of us had the gym back to normal in about a half an hour. We headed home after that and when Rob went over to do janitorial the ladies in the kitchen gave him all the leftovers to bring home. So Sunday morning we redid the meal plan to make sure all the leftovers got eaten. I love free food!

Another goal of mine this year is to get more of my projects finished. I have quite a few UFO's(UnFinished Objects) floating around the house, most of them are craft things that have been started or supplies have been bought for but the project was never gotten around too, or more likely I never made time for it.
Here is one of my newest creations, these I found at a garage sale someone had cut out about half of the pieces and then left it. It was just the plastic canvas, but I had yarn in my craft stuff that I used and finally got them done. I paid $0.50 for the plastic canvas and the yarn had been given to me so I made these 30 ornaments for $0.50!

Death By Smores Cookie Bars
Over the past few weeks I have been slowly trying to go through my cupboards and organize them. I recently found a jar of marshmallow fluff way in the back of the cupboard.
How did that get there and how long has it been there? I figured it had been there for quite awhile judging by the layer of dust on it. Oops!
So, I searched the internet until I found a recipe that used marshmallow fluff. I was really excited when I found this one that would also use up some of the graham cracker crumbs that I also found in the cupboard. Not to mention that they sound absolutely delicious!! The kids are going to have these for after school snack. Boy are they going to be excited. They even look yummy!
½ cup room temperature butter
¼ cup brown sugar
½ cup sugar
1 large egg
1 tsp vanilla
1 ⅓ cup all-purpose flour
¾ cup graham cracker crumbs (whizzed in food processor until fine)
1 tsp baking powder
¼ tsp salt
6 milk chocolate bars (I used chocolate chips and it worked great)
1 ½ cup marshmallow fluff
Preheat oven to 350°. Grease an 8-inch square pan.
Combine and cream together butter, brown sugar, and sugar.
Beat in the egg and vanilla.
Whisk together in small bowl flour, graham cracker crumbs, baking powder, and salt.
Add dry mixture to butter mixture and mix at low speed until combined.
Divide dough in half. Press half of dough into an even layer on the bottom of the pan.
Place milk chocolate bars over dough in single layer.
Spread marshmallow fluff over chocolate
Place remaining half of dough in a single layer on top of marshmallow. Tip: Flatten small pieces of dough into small shingles and layer them together.
Bake for 30 to 35 minutes, until lightly browned.

Our furnace is paid off!!!! We had a new furnace installed in the beginning of December and decided to go with the high efficiency one. We had some of the money saved for it but wanted to get it put in before the cold weather came. We applied for financing for the furnace, and ended up getting it fully covered with a loan that had no interest for 3 months. So we made the decision to have it completely paid off before the interest started. The interest would have started on March 15th so we paid it off a month and a half ahead of schedule. YAY!!!
We decided that we would like to have the rest of the debt paid off by the end of the year. We have gone over all the bills and this should be possible if we are careful.
Two years ago we started trying to get out of debt. We decided that if having payments was normal we definitely didn't want to be normal(not that we were anyways). This is where we started and where we are now:
STARTING DEBT $40,567.12
DEBT TO DATE $$13,685.85
We decided that we would like to have the rest of the debt paid off by the end of the year. We have gone over all the bills and this should be possible if we are careful.
